New Sweet Protein Is 3,500 Times Sweeter Than Sugar With Little Blood Sugar Effect

A new sweetener called sweelin is attracting attention because it delivers an unusually intense sweet taste from a tiny amount of protein. Developed from a naturally sweet protein found in the serendipity berry, sweelin was redesigned using computational protein engineering to improve its stability for food use. It is reported to be roughly 3,500 times sweeter than sucrose by weight, so only a very small amount is needed to create a sweet taste. In some food applications, the ingredient has been tested as a way to replace part of the sugar normally used in a recipe. A 2026 randomized, double-blind crossover study tested sweelin in 19 healthy adults and compared it with stevia and dextrose. Blood glucose, insulin, and GLP-1 were monitored for two hours after consumption. Sweelin produced glucose and insulin responses similar to stevia and substantially lower than the dextrose control. The findings are promising, but the study was small, short, and funded by the company that developed the ingredient, so it does not establish its long-term health effects. Earlier safety work included toxicology testing and digestion studies, while US regulators reported no questions regarding the company conclusion that the ingredient meets the criteria for safe use. The bigger question now is whether sweelin can deliver a sugar-like taste, work reliably in real foods, compete with established sweeteners on cost, and remain useful across different processing conditions. Larger and longer independent studies would provide a clearer picture of its potential.
