A small 2026 human trial tested white bread enriched with spinach against regular white bread in 15 healthy adults. The spinach bread was made with 20 percent spinach and delivered substantially more fiber, folate, calcium, iron, and potassium than the standard loaf. The researchers also found that the insulin response reached its peak about 30 minutes later after the spinach bread, while overall glucose and insulin exposure were similar between the two breads. Participants also reported less of the later hunger increase seen after regular white bread. The study is interesting because it explores a simple way to add vegetables and nutrients to a familiar staple without making the food dramatically different in taste or texture. However, the trial was small and short, and the researchers did not establish why the insulin timing changed or whether the finding would lead to meaningful long-term health benefits.
